MOVEABLE FEAST WITH FINE COOKING: Northern Spain

 

Host Pete Evans travels to beautiful Bilbao, Spain, in this week’s episode of Moveable Feast with Fine Cooking. Pete’s here to cook up an incredible feast with star chefs Agustin Araquistain and Dani Lopez. Gathering inspiration from this incredible region, the team heads out to the seaside town of San Sebastian, where they sample an assortment of small traditional snacks called pintxos. Then they jump in to make their own versions, including Anchovies with Guindilla Chiles and Olives; Blood-Sausage-Stuffed Piquillo Peppers; Shrimp, Hard-Boiled Eggs, and Aioli; and a mouthwatering Squid with a Basque Vinaigrette. Leaving San Sebastian, they visit a farm in scenic Getaria to learn about Idiazabel, an artisanal cheese made with sheep’s milk from the farm’s herd. Heading back to San Sebastian, the chefs roll up their sleeves at the Mimo Cooking School and cook up a delicious Basque-inspired meal with Steak and Roasted Piquillo Peppers; Tear-Shaped Peas with Artichokes, Asparagus, and Carrots; Stuffed Squid with Ink Sauce; Kokotxas “Pil Pil,” and a Sheep Milk Custard with Walnut Ice Cream for dessert.

Host Pete Evans joins Chefs Duff Goldman and Bryan Voltaggio in Baltimore. After gathering crabs from JM Clayton Seafood Company, the group visits the small specialty store of Hex Ferments to purchase the best sauerkraut in the area. Pete starts the feast with Thai-style deviled eggs with crab mayo and kraut, while Bryan serves a true Maryland blue crab feast and Duff aces it with the classic Smith Island Cake for dessert.

For nearly a year, 50 animatronic cameras disguised as realistic life-size penguins, eggs and rocks infiltrated penguin colonies to record the tough challenges penguins face from the moment they emerge from the sea to raise their chicks and finally return to the water. This series reveals the intimate, emotional, and sometimes amusing behavior of nature’s most devoted parents bringing up their young against the most extraordinary odds.

 

Watched by spycams, newborn emperor penguins in Antarctica are caught walking on their mothers’ feet and taking their own first unsteady steps. On the Falklands, rockhopper chicks meet their unruly and predatory neighbors, while “eggcams” provide unique views of the colony. In Peru, Humboldt chicks take on fur seals and take aim at gulls.

Watch as Emperor penguins cross a treacherous frozen sea to reach their breeding grounds. Rockhoppers brave the world’s stormiest seas only to come ashore and face a daunting assault up a 300-foot cliff, hopping most of the way up. Tropical Humboldt penguins negotiate predatory sea lions and vampire bats to reach their desert nests. The hard work for all the penguins finally pays off when their tiny, vulnerable chicks begin to hatch.
