Chinatown, Reimagined

 

This series travels across the United States to explore Asian cuisine’s impact on American food culture. Hosted by Danielle Chang, the six-part series explores a wide variety of Asian food and drink and meets the new generation of chefs and entrepreneurs dedicated to keeping traditions alive. The series features renowned chefs and culinary personalities such as Top Chef winner Kristen Kish, YouTube sensation Maangchi, Chinese master chef Susur Lee and ramen entrepreneur Ivan Orkin.

 

Chinatown, Reimagined
Track the evolution of Chinese food in America through the eyes of two third- generation Chinese American restaurateurs. Wilson Tang preserves the legacy of his family’s dim sum parlor (America’s oldest) while opening a fine-dining Chinese restaurant on Chinatown’s expanding Lower East Side. Ed Schoenfeld, a self-proclaimed Chinese food expert and owner of one of the most critically acclaimed Chinese restaurants in New York, provides a tutorial on Peking duck preparation.

 

HIKI NŌ
Focus on Compassion: Animals

 

The final installment of the four-part Focus on Compassion HIKI NŌ series focuses on peoples’ compassion toward animals, including house pets, working pets, exotic animals and endangered species. Like the previous three shows, this episode is hosted by Crystal Cebedo, a 2016 HIKI NŌ and Wai‘anae High School graduate who is currently attending Menlo College in Atherton, California.

 

The outstanding HIKI NŌ stories in this Focus on Compassion show include:

 

–“Dog Adoption” from Kapa‘a High School on Kaua‘i: a look at a creative program initiated by the Kaua‘i Humane Society to promote dog adoptions through visitors taking the animals on nearby field trips.

 

–“Towards No More Homeless Pets” from Lahaina Intermediate School on Maui: a feature on the spay/neuter clinic conducted by the Maui Humane Society to compassionately address and prevent the overpopulation of homeless cats on the island.

 

–“Three Ring Ranch” from Kealakehe High School on the island of Hawai‘i: the story of how one woman’s life work to protect and educate about exotic animals was inspired by the animals who helped her recover from a debilitating accident.

 

–“Passion for Service” from Seabury Hall Middle School on Maui: the story of a young woman who spent almost half her life volunteering at Assistance Dogs of Hawaii, a program that trains dogs to assist people with special needs.

 

–“Wounded Warriors” from Waialua High and Intermediate School on O‘ahu: a feature on the work of Hawaii Fi-do, an organization that trains service companion dogs, and the positive impact one of their companion dogs had on a Schofield soldier in the Wounded Warrior Project.

 

–“Nene” from Chiefess Kamakahelei Middle School on Kaua‘i: a look at the multi- state agency project of removing a flock of nene, Hawai‘i’s state bird, nesting on Kaua‘i Lagoon between the two runways at Līhu‘e Airport to a safer location for the birds and the public.

 

–“Mālama NOAA” from Āliamanu Middle School on O‘ahu: a feature on the efforts of the National Oceanic and Atmospheric Administration (NOAA) to protect and preserve the endangered Hawaiian monk seal population through medical care of sick or injured seals, the enforcement of laws, and through community education.

 

–“Hokulani” from Mid-Pacific on O‘ahu: the story of a Pomeranian that spreads joy wherever it goes.

Explore the origins of various regional music genres. Joseph Kekuku, regarded as the inventor of the steel guitar, is at the center of the Hawaiian slack key story. This episode also traces the hybrid cultures evident in Tejano music, along with stories behind Cajun music and the music of the Hopi tribe.

Northern Thai Cuisine

 

Andy Ricker, a carpenter-turned-chef from Portland, OR, prepares a welcome dinner for the participating chefs at LA’s Lotus of Siam restaurant, with chef/owner Saipin Chutima at the helm. The duo create their collective version of a spicy Issan dish. At the table, Jet Tila rhapsodizes about the days when his family opened America’s first Thai grocery store in Hollywood and introduced lemongrass, kaffir lime leaves and other ingredients to the American palate.

Koreatown U.S.A.

 

This episode visits New York and Los Angeles – home to the two largest Korean populations in the United States – to explore what distinguishes each. Both are 24-hour hubs of food and drinking culture. However, New York City’s Koreatown covers just one block, whereas Los Angeles’ Koreatown seems like a city unto itself. At dinner with host Lisa Ling and her husband Paul Song, Chef Sang Yoon breaks down the basics of Korean cooking. Back in New York, Top Chef winner Kristen Kish, a Seoul-born Korean adoptee, receives a kimchi tutorial from Korean YouTube sensation, Maangchi. The episode ends with a night out at Pocha 32, an export of Korea’s popular “tent” restaurants.

Over three decades, his “Believe It or Not!” franchise grew into an entertainment empire, expanding from newspapers to every form of media in the 20th century: radio, film and, ultimately, television. At the center of it all was Ripley, whose obsession with the odd and keen eye for the curious made him one of the richest men in the country. Americans not only loved his bizarre fare, but were fascinated by the man himself; the eccentric, globetrotting playboy became an unlikely national celebrity.

Hotel Armadillo

 

You won’t find this hotel on the beaches of Rio. Deep in the heart of the Brazilian wetlands, the mysterious and secretive Giant armadillo digs a new burrow every other night. Once this termite-eater moves on, it leaves behind one of the hottest plots of real estate in the tropical Pantanal for 80 species of diverse and ever-changing animal clientele.
