MOVEABLE FEAST WITH FINE COOKING: Beachside in Brighton

 

We are in Brighton, a beautiful English seaside resort town, in this episode of Moveable Feast with Fine Cooking. Host Alex Thomopoulos is here to cook a feast with acclaimed chefs Michael Bremner and Sam Lambert. To gather the freshest fish, the chefs head to Brighton & Newhaven Fish Sales, where fisherman deliver the daily catch straight from the sea, then to inland to Namayasai, a gem of a farm that grows an exquisite array of Japanese vegetables. And finally, they travel to Saddlescombe Farm & Newtimber Hill, where sheep graze in the scenic British countryside. Back at Chef Michael’s waterfront restaurant, Murmur, the trio cooks a delectable feast with the daily catch and an Herby White Wine Butter Sauce, Fire-Roasted Lamb, and Shrimp Shu Mai.

This series combines flavorful ingredients, top chefs and beautiful locations for the ultimate dining experience. In the third season of the Emmy-nominated series, Australian chef Pete Evans goes coast-to-coast, traveling to Nashville, Louisville, Miami, San Antonio, Hawaii and other locations across the United States to meet the best chefs in each area and cook a delicious meal that incorporates local and seasonal ingredients.

 

Homer, Alaska
Pete travels to Homer, Alaska to team up with a mother-daughter duo, chefs Kristen and Mandy Dixon, to explore local Alaskan cuisine. Kristen, who has been cooking in the backcountry of Alaska for over 20 years, and Mandy take Pete on an adventure to forage for ingredients for their feast. Mandy prepares a salad along with the signature Tutka Bay sling cocktail, while her mom Kristen makes the main dish: fisherman’s stew with mussels, crab, scallops and tomato broth.

Featuring lifelong fisherman Kelson “Mac” Poepoe, whose fishing conservation program is based on historical practices, this story shows how a community turned the tide on a seemingly doomed resource.

Featured are: Mac Poepoe, a Native Hawaiian fisherman and a community leader on Molokai who has dedicated his life to ensuring that the ocean will be well-stocked for generations to come; and Herbert Hoe, who recognized how the widespread health afflictions of the Native Hawaiian people impaired their ability to care for themselves, and created his ‘Ai Pono diet program utilizing the traditional foods of ancient Hawaiians.
