The Queen’s Garden

 

With permission from Queen Elizabeth, this program covers a year in Buckingham Palace Garden, exploring both the history and the natural history of this remarkable hidden royal treasure in the heart of London. Viewers see the garden’s transformation across four seasons, with a chance to marvel at rare flowers bred especially for the queen, extraordinary wildlife captured with hidden cameras, a vast lake with an island in the middle where royal bees make honey, and a 15-foot marble urn that once belonged to Napoleon. The wildest corners function as an important wildlife haven in London, as well as serve as a backdrop for the annual 8,000-attendee Royal Garden Party.

In this episode of Moveable Feast with Fine Cooking, host Curtis Stone is joined by Chef Martin Rios, co-owner of award-winning restaurant, Restaurant Martin in Sante Fe, and Chef Leslie Chavez, who shares her strong background in catering and pastry in New Mexico. Together they visit The Rooted Leaf and Celestial Bee, a farm that produces exquisite bee honey and fresh, highly cared-for produce. They also visit a local chile farmer to see how Chimayo chile, a local heritage pepper, is dried and ground. At a colorful hacienda in Santa Fe, Chef Rios makes rosemary roasted turnips and Chef Chavez makes a sopapilla with the locally-sourced honey. In the third season of the Emmy-nominated series, Australian Chef Pete Evans goes coast-to-coast, and across the sea, traveling to Nashville, Louisville, Miami, San Antonio, Hawaii and other US locations to meet the best chefs in each area and cook a delicious meal that incorporates local and seasonal ingredients.

 

Austin, Texas
Pete makes his way to Austin to get a taste of some authentic Texas cuisine with father-son chef duo Jack and Bryce Gilmore. Pete meets them at Urban Roots Farm, an organization that uses food and farming to transform the lives of young people, where they pick vegetables and get honey right from the combs. Then they get down to work preparing the evening’s feast which features goat carnitas with all the fixings; Brazos Valley cheesy grits; honey glazed carrots; chicken-fried goat; and beet hummus with farm vegetables.

Miami, Part 2: Biscayne Bay
Host Pete Evans joins Chef, restaurateur, and James Beard award-winner Michael Schwartz and his friend Chef Giorgio Rapicavoli in Miami at Biscayne Bay. Their first stop is Sublicious Farms, a gourmet mushroom farm to pick up oyster mushrooms for Giorgio’s mushroom terrine with pickled onions and charred bread. Next they visit Michael’s favorite seafood shop, the Casablanca Fish Market to source some fresh catch for Michael’s crab fritters and mixed seafood fideua. They finish off the evening with Michael’s dessert peaches on the grill with local honey, crema, coconut and yogurt.
