We Can’t Get Enough of Butter Mochi

Here is Jody Endo Chai’s recipe for Butter Mochi

  • 1 box of mochiko flour (16 oz.)
  • 3 tsp. baking powder
  • 3 c. sugar (little less)
  • 1 stick (1/2 c.) butter, melted
  • 1 tsp. vanilla
  • 5 eggs
  • 2 c. milk
  • 1 can coconut milk

9×13 pan; Bake at 350 degrees for 1 hour 15 minutes

Lilikoi & Guava Glaze:

3/4 c. powdered sugar

1 1/2 tbsp. lilikoi / guava purée
